Sourdough Brownies

Updated: Apr 3

Yeah for Sourdough Starter! Another fantastic way to use up your sourdough starter, less waste and something gooey and chocolaty to snack on. This brownie recipe is by far my favorite, it's everything you want in a brownie and more.

For added texture and flavor I have added chunks of cream cheese, unsweetened dried cherries and chocolate chips. Give this a shot and you will not go back to any other recipe.

Yields 12 large pieces

Equipment:

Kitchen Aid Mixer

9x9 Baking Pan

Ingredients:

150g All Purpose Flour

60g Double Dutch Dark Cocoa

1TSP Baking Powder

150g Unsalted Butter

2 Large Eggs

250g Sugar

100g Sourdough Starter(Fresh)

1TSP Vanilla Extract

60g Cream Cheese

170g Chocolate Chips

40g Unsweetened Dried Cherries

****Starter: I have used both fresh starter and discard, they both worked beautifully. The discard should not be older that 12-15 hours.

Method:

1) Preheat oven to 350F. Line your baking pan with parchment. Set aside for later use.

2)In a bowl, measure and mix thoroughly the flour, cocoa, and baking powder. Set aside for later use.

3)In a small saucepan, measure and melt the butter over low heat. Set aside to cool a bit.

4)In the bowl of the mixer, add the eggs and sugar. Use the whip attachment and mix on a medium low speed for 2-3 minutes. Make sure to stop the mixer halfway to clean up the sides and to make sure all ingredients are getting incorporated.

5)After 2-3, then add the starter and vanilla extract. Mix on low for another 1min.

6)When all the ingredients are combined, take it off the mixer and pour the warm butter, stir to combine with spatula.

7)When combined, add the dry ingredients, mix to combine.

8) Mix in the chocolate chips.

9) Start assembling it in the baking pan. I used a large scoop to help me out. Did about 5 scoops, then added the small cream cheese chunks, and cherries.

10)Scoop the rest of the batter and try to spread it evenly and bake for 20-25 min. Start checking for doneness at the 20 minute mark. Do not bake this longer that 25 minutes, it will end up being more like a chocolate cake than a brownie.

11)Let it cool for at least 15 minutes and enjoy.

Bon Appetit!
