Quick Summer Stir Fry

This is the perfect stir fry when you don't have a lot of time and want to keep it simple and delicious. It just requires a few ingredients and you're good to go. You can have this as a side or a light lunch/dinner.
Serves 4 small portion
Total prep/cook 15min
Special equipment : spiralizer
Ingredients:
Zucchini 2(any variety)
Carrot (1 large or 3 small )
garlic 2 cloves
peanuts 1/4 cup
oil (any neutral) 2-3 TBS
soy sauce 3TBS
red pepper flakes(to taste)
Thai basil (garnish)
Method:
1) Gather and prep all ingredients. Use your spiralizer to get the zucchini's ready, then peel and julienne the carrots. Roughly chop your garlic and peanuts, set aside all of the ingredients.
2) Get a skillet warmed up on a medium heat, then add the oil and garlic. Cook for 30 sec then add the zucchini noodles. Cook for 2-3 min. You are trying to warm the zucchini up and for it to soften slightly.
3)Now add the julienned carrots and cook for 1 min more. Finish with the addition of soy sauce, roughly chopped peanuts. Give it one last toss to combine everything.
4) Immediately serve on individual plates and garnish with more peanuts, red pepper flakes, and Thai basil.
Additional notes: You can even use yellow squash or the combination of the two.
