Halloumi Winter Salad

I can sit here and give you all the reasons in the world to give this salad a try but hopefully with one look at it, its enough encouragement. First, it's the perfect salad to throw together if pressed for time, and it still manages to be both fulfilling and satisfying. Second, the assortments of flavors and textures are beyond incredible. But the most important reason to make this salad is for the grilled halloumi. Yes you heard me, this firm briny cheese brings this whole dish together into one bite of deliciousness.


3 TBS Lemon Juice

6 TBS Olive Oil

Kosher Salt

Black Pepper


1 Romaine Lettuce (roughly chopped)

1/2 Frisse (roughly tore up)

1/2 of a Red leaf lettuce(roughly chopped)

Halloumi cheese 6oz


3 TBS Olive oil

1/2 cup of grapes

2-3 Limequats thinly sliced

****This recipe is very forgiving, adjust any of the quantities to your liking.


1) Make the dressing in a bowl and season to taste. Set aside for later use.

2) Wash, clean, dry the greens of your choice and place it in bowl or platter of choice.

3) Cut the halloumi into strips, and season lightly with sumac. Heat your grill pan over medium heat, add 1-2 TBS olive oil and cook the halloumi until browned on both sides. This should just take a 1-2 minutes. When caramelized on both sides, place it on a paper towel lined tray.

4)Cut the halloumi into smaller slices and set aside for later use.

5)Now add the additional oil, and cook the grapes in the same pan. Stir and toss, this should take only a 1-2 minutes. Set aside for later use.

6) Thinly slice the limequats and start assembling the salad with the greens, grapes, limequats and finally the halloumi. Finish with dressing it and enjoy immediately.
