Green Fruit Salad



As days are warming up, this is the perfect salad to throw together in matter of minutes to not only satisfy your cravings but also a great way to cool you off. It only takes a few ingredients and you are left with a very satisfying snack, meal, or a side dish.


Ingredients:

3 Kiwis with peal

2-3 small English Cucumbers (depends on the size, mine very pretty tiny)

1/4 Cup Chopped Parsley

1/4 Cup Feta (or use vegan Feta)




Dressing:

1TBS Lemon Juice

2 TBS Orange Juice

1 TBS Honey

6 TBS Olive Oil

Salt/Pepper


Method:

1) Wash, clean, and dry all on the ingredients for the salad. Then start to dice the kiwis and cucumber into 1/4" cubes and place them onto your desired bowl or platter and top it off with the feta and chopped parsley. Set aside and start making the dressing.


2) In a small bowl place all of the ingredients for the dressing. Adjust the seasoning to your liking. If you want it sweeter add more honey, if you want more tanginess then add more lemon juice.


3)Serve salad immediately or store in the refrigerator (just make sure to not add the dressing until ready).


4)When ready you can either dress the whole salad or serve the dressing on the side.
