YUM! Thats all I gotta say, who doesn't want a slice of this chocolate deliciousness? Think about it, no gluten and all the goodness. 😋
Here we go......
Cashew butter/Almond butter 1/2cup
Sweet Potato( diced fine) 1 cup
Maple syrup 1/3 cup
Coconut oil 2.5 TBS
Baking Soda 1/2 Tsp
Cocoa Powder 1/3cup
Chocolate chips 1/2 cup
1) Preheat your oven to 325 (bake)
2) Line your 8x8 baking dish with parchment paper (just the bottom)
3) Measure and pour all of the ingredients with the exception of the chocolate chips into a very strong blender or food processor. I found the blender works better with the chopping of the sweet potatoes.
4) Blend until everything has been incorporated and its a smooth consistency. Will definitely have to scrape done and mix with hand your hand a few times in order to get the smooth consistency.
5)When ready, add the chocolate chips to the batter and mix. Make sure to keep some in reserve for the topping.
6)Pour into the baking dish and bake for 24 minutes.
7) Let it cool and serve.
***I like to refrigerate this to make it a little firmer but you know its delicious any way you have it.
