All Purpose Mayo Sauce

If your looking for an all purpose sauce to elevate your burgers, sandwiches or wraps then look no further because I have come up with a solution.

Combination of a few fresh ingredients is all you need to make this simple sauce and plus it stays fresh for a week.


Ingredients:

2 Large Egg Yolks (room temp)

1TBS Dijon Mustard

3/4-1 Cup Canola oil (any neutral oil)

2 TSP Pickle Juice

2 TBS Finely diced pickles

1TSP Finely diced Jalapeño

2 TBS Finely diced red onion

1TSP Smoked Paprika


Special Equipment: Whisk and a bowl


Method:

1)Gather all ingredients.

2)Grab a small bowl and to it add the egg yolks and dijon mustard, whisk to combine. Then start adding the oil, only one to two tablespoons at a time. Whisk to combine and continue adding the oil until its thick and creamy.


***the goal here is to achieve a creamy consistency, that being said, you may not use all of the oil.




3) When you have gotten the consistency in the above picture, then proceed to adding the rest of the ingredients. Mix to combine and adjust seasoning to your liking if necessary.



4)Store in a tight lid jar. Keeps fresh for a week.
